An absolutely fabulous Cornicabra variety olive oil with a very complex flavor of both ripe fruit and green fruit flavors. The flavor is present with ripe berries, cherry, fresh herbs, and bright citrus. The aroma of this oil is a wonderful mix of sweet berries and tart lemons, mixed with thyme, fresh grass, and rosemary. It is perfectly balanced, with medium bitterness and strong pungency that matches the intense fruitiness. It tastes very fresh and has a warming, peppery finish blended with baking spices that lingers and prevails over the tannic bitterness. Olive oil does not get any better!
Due to its healthy, green, and vibrant nature, this oil is incredibly versatile. Use it in bold herbaceous sauces, marinate chicken, pork, or beef, or add it to compound butters and sauces served over meat. Due to its berry—and citrus-forward aroma, it’s also a lovely finishing oil over risotto and creamy-based pasta sauces or to accompany cheese.
